Quinoa is the highest protein grain in the world. NASA used it for early space food and it was a principal part of the diet in Inca times. It grows only above 3,000 metres above sea level at this latitude. Soups and porridge-like meals are made from it as well as biscuits and cakes. When served it resembles cous-cous.
